WINTER WARMER: VEGGIE BEAN CHILLI

The nights are dark, the days are chilly and everyone around you on the train or at work is¬†sniffling – what do you do? Make yourself a batch of this warming winter chilli – packed with veggies it’ll boost your immune system and get you feeling warm and healthy in no time!

Ingredients:

  • Tinned tomatoes (I used Tarantella¬†tomatoes which are naturally sourced from the heart of Italy and are free from additives, pesticides and GMOs)
  • Black beans
  • 1 large onion
  • 1 large bell pepper
  • 2 tbsp tomato puree

I also added some paprika, chilli salt, chipotle power and chipotle paste (not pictured) – which give it a bit of an extra kick to clear out those bunged noses!

Method:

  • Whack everything into a slow cooker or pan on a medium heat and simmer away, stirring occasionally
  • Add some corn flour mixed with water to thicken it up to the desired consistency (mix 2 tablespoons with water until you get a paste and then stir in)
  • Serve with slide avocado and crumbled feta!
